Saw a bird of prey today being molested by a group of rooks over Viby
Høskov, near Århus. Through my (cheap-and-nasty) binoculars it had a
very deeply forked tail and lighter patches on the outer part of the
under side of the wings. My Collins' Field Guide suggests a Red Kite
(glente). Would that be unusual in this part of the world?

No, that sounds very likely.
"Fugle i felten" categorizes it with 10-100 breeding couples in Denmark
and 100-1000 migratory birds visiting spring and fall, and 10-100 winter
guests.
And I guess it's hard to mistake any other bird for it, except of course
the Black Kite. But that's much more rare here. It also has a much less
forked tail and is of course darker.
